Default What Should I Do While I'm In The Restoration Process

Once again I must bring up the restoration project that will soon be in operation. The thing will soon be totally apart. That brings me here. What things should I do while the car is all apart. What should I repair, cleanup, and or replace? One limit I do have though is that I want to keep the car close to being all stock, and all original, because of its age. Any input is greatly appreciated. Thanks, in advance.
