It seems to happen more so on profiles. You can use an exhaust deflector and adjust it to try to the wasted fuel to a minimum, but keeping the plane clean after flying is key.
You can get the deflector from your LHS or Tower has them. Hope this helped.

I have never done anything special about this nor had a problem with a servo failing because of exhaust goo on them. I just mount them in the tail (output shaft on the left side of the plane) and fly making sure to clean the plane at the end of the day (Mike would argue that last point LOL ) If you are worried about the, it wouldn't take much or add much weight to build a little cover over them. I would be more concerned about what the exhaust residue will do to the balsa at the opening. I run a bead of Permatex Silicone Gasket Maker around the servo to keep oil out of the opening, then just wipe the servo off when you clean the plane.

Another thing you can do is add a bit of wood stand-off to the servo mount so the servo doesn't pass all the way through the fuse. Then just don't cut through the covering on the exhaust side and you'll have no worries.
On the other hand, I have a number of slabs with the servo bases right in the "goo zone" and haven't had any problems, even after many, many gallons of fuel (and I'm pretty slack on the cleaning )
