Default Taking temp reading with gun

I have a non contact laser point temp gun. I'm just wondering where you guys take your readings. There can be an easy 30-40 degrees difference from the carb side to the exhuast side when pointing straight down on the flat/level glow plug surface of the head. To this point I have been going by the hottest spot on the head and using that to aide my tuning (along with my eyes and ears).

Right, that's the most accurate reading of engine temperature you can measure.
