You remove the diff from the truck, open the 2 case halves, remove the ring gear from the diff cup, clean all the old oil out of the cup/gears, reassemble the cup with spider gears, fill with oil, reinstall ring gear, lube ring and pinion, reinstall case halves, install diff in truck.....rightside up! Reassemble truck.

When filling the diff with oil, is there a rule of thumb about how much to put in it? Like on a 1:1 vehicle, your diff's are only about 2/3 full. If you fill it all the way to the top, will that cause drag in your drive train? Do you fill it half way or all the way full?

The "drag" you refer to is from side to side, not an actual drivetrain drag. And that side to side drag, or resistance is what we are tuning for. There are many theories on the filling of diffs tho...leave an air bubble area for heat expansion....
The thing is, do each the same, as far as LEVEL is concerned, every time you do it, then you'll fully experience the repeatability of your diff tuning efforts.
As I set a diff up, I fill until the horizontal(as it sits for filling) spiders are completely covered. The maniscus of the fill will then accomodate the other spider assembled with the ring gear, and no spillage. I do it the same way every time, and my diffs respond the same way every time I put them in service.
So whether you call it full, as I do, 2/3's full or what ever, do it the same way every time.
Bashing, I run 30 front an rear, as deliverred fro the factory, but filled to my specs. The racer, also C/D equipd runs a 50/50 blend in each diff 50K/30K frt and 30K/10K rear, straight 50K in the c/d.
