All your features should work, the digital servo has a lot more reference points between mid point & the end point of the servos travel, so you get a smoother transition, especially if you increase the travel of the servo.
RC car action had a whole article about the differences between digi & analogue servos one or two editions ago. If you have access to a copy it's worth the read.
For sport boating it won't matter too much.
I wouldn't use a hitec 645 for stearing though, I have used them in 1/8th buggy racing & they don't like a lot of load & constant change of direction. The hitec 5 series (ie 5925 5955 etc) are a lot better, but also more expensive, I have had issues with the Hitec 6 series.
just my opinion.

Digitals don't like water.
Nothing wrong with the 645's for rudders. A few have failed but Hitec warranties them.
Digitals are faster and hold better.
The Fasst system was designed with digitals in mind.
I recommend a 1/4 scale size for the rudder though, bigger gears, bigger drive train.

Check out this one: Futaba S9156 Digital Heavy Duty Metal gears, aluminum heat sink case, same size as a standard servo, weighs only 2.2 oz. and has massive torque using a 6v Rx battery....340 oz./in. Cheapest I found it was $106

But this is a for a boat, why would a boat need the best servo? The only thing i see a boat would need a good servo are for the throttle if you use the throttle trim to adjust your idle. Cause when my old servo starts to glitch my engine cuts off.

after using cheap servos in models & having failures, I will always go with a reliable servo & radio. the worst thing you can do is skimp on radio gear & have an expensive model written off or injure someone becuase you went cheap on the things that control it. a glitch, stripped servo, or faulty receiver can ruin your day at the track, pond or flying field. if it's a slow toy (eg traxas blast) no problem, if you're geting any performance out of it, you're better off doing it right.
just my 2 cents.

Digitals generally have higher torque ratings, center better, and have higher holding power than analog servos. In addition, with the 3PM FAST radio if you want to use the HRS mode you MUST use digital servos. The HRS mode offers the major convenience of saving the failsafe settings. In PPM mode you have to reset the failsafe every time you turn the TX back on for a given model. This is done by pushing the button on the back to the TX (the green light)
The 9156 is a killer servo if you need lots of torque. I use theme in my big FE boats (60 to 80 mph boats) and my gassers.

Johnny....I use a Futaba 3PK w/ 2.4ghz Fasst system in my Expresscraft MTI Cat....I also use Hitec servo's "Digital Sport Series". Currently running two HS-5645MG servos on my rudders (DUAL RUDDER SET-UP), @ 6 volts they give 168 oz of torque. On my throttle im running a HS-5625MG. You can find these on ebay for a great price, and they way exceed what is needed!
Heres the thing, why invest all that money into a 2.4 system then add cheap analog servos to it...the only way to utilize all the electronics is to go digital...much smoother, better responce, setting control points is way more accurate..........be like adding john doe walmart tiress to a set of 22 inch DUBS.

Your right about the cheap walmart tires on expensive 22in rims. I am glad that you said you have hitec 5645mg for the rudder and 5625mg for the throttle cause that was the same thing i order on towerhobbies this morning.

Good choice, I agree. Also Hitec have a second to none warranty & customer service in case anything does go wrong.
Although I likt the Airtronics M11 radio over Futaba. That's just my preference though.
