esc + motor
would it be alright to use a 18t motor with a 20t esc thanks in advance

The ratings are put in place for a reason, That being said you may get away with it but its a 50/50 thing. Remember the lower turns the more current draw. So give it a try and if it goes up in smoke buy a proper one.

You have the right idea, Hook it up and run it checking the temps of the esc every few minutes.
